Week 4 update

Hi everyone, here is my week 4 update! Instead of making the cheesecake, I made chocolate chip cookies with a new recipe, they were so good. I have never made anything with brown butter before and I don't think I will ever make cookies another way. When making the cookies I was won over by the picture I found which looked absolutely delicious, I also never knew what brown butter was before and after making these cookies they were unreal, I think I would have bought a better quality chocolate chip though if I wanted them to get as melty as they do in the photo. Something that I am having trouble with still is going to the grocery store in order to get items for my recipes, I am trying my best to use recipes that involve things I already have at home so I am going to keep with that until I am able to go to the grocery store more ...

Vegetarian Chili (crockpot)

Vegetarian Chili In a crockpot on high add diced onion, garlic, carrot, celery, 2 cans of diced tomato, kidney beans, chickpeas, black beans, a jalapeno (cut into small pieces without the seeds), 2 tbsp of chili powder, 1 tsp ground cumin, 1 tsp dried oregano, 1 tsp sugar, 1/4 tsp salt, 1 cup of vegetable broth, 2 tbsp red wine vinegar, 2 tbsp of tomato paste.  Reduce the heat to low and let it simmer for a couple hours.  To serve I add shredded cheese, sour cream, and hemp hearts for some extra protein.  I usually make this in the morning and eat it for dinner that night.   

Vegetarian Taco's

 Vegetarian Tacos: One of my favorite foods to make, and one of the hardest things to find at a restaurant. Ingredients:  1 pouch of Taco seasoning Extra-firm tofu (depending on how many people you are serving and how much you want) Tortillas 1 medium onion (I used yellow but you can use whatever you have) 3/4 cup corn 2 red bell peppers Garlic Toppings: Avacado Sour cream Cheese  Salsa Instructions:  1. Cut or crumble your tofu depending on your preference, this week I cut mine into pieces but either way it turns out very similar. Cook it until it's a little crispy then add half of your seasoning packaged (follow instructions on the package for water to seasoning ratio). Make sure you get extra firm tofu, in my experience, I don't like cooking with other kinds of tofu and the texture of other kinds is not my favorite.  2. So far this week I have made Taco's, they are one of my personal favorites! I will be uploading the recipe shortly after this post so that you can make them too!  This week I am looking to try at least one new recipe and I think it is going to be a dessert. I found a recipe on Tasty for Caramel Apple Crumble Cheesecake and that sounded super yummy so I think I am going to try and make that. I have made a cheesecake before, and I have made an apple crumble, so I am very hopeful that combining the two will be a good idea.  I am finding lots of recipes that I want to try, the only issue I have been having so far is having to go to the grocery store to get ingredients. So far all the recipes I have cooked are made from things I already had at home, and due to lockdown, I have been trying to avoid leaving my house. Recipe: Spicy Vodka Sauce (Gigi Hadid's Pasta)

This sauce is super easy to make and it's a delicious meal to make for both you and your friends (the leftovers are super yummy as well) Ingredients:  1 tbsp Olive Oil 1/4 Diced Red Onion 2 Cloves Garlic 1 can Tomato Paste 1tbsp Vodka/Wine 1/4 cup of Heavy Cream (35%)  1 tbsp Butter 1/4 cup of freshly grated Parm 1 tbsp Red Pepper Flakes Instructions 1. Dice your red onion and garlic. 2. Put a medium-sized saucepan (larger depending on how much pasta you are making) over medium heat, once it is hot add the oil to the pan along with the onion and garlic. 3. Put a pot of water on to boil while you make the sauce. 4. Saute your onion and garlic until it is fragrant and the onion is translucent (make sure you stir it, you don't want to burn it). 5. Add the can of tomato paste and mix the onion and garlic into the tomato paste, cook for about 5-8 minutes, while cooking the tomato paste it should begin to darken (this is what you want!!). 6. My Favourite Breakfast Burritos

This is one of my newest recipes and has quickly become a favorite. Making breakfast burritos seems challenging but I promise they are easy and delicious!! I only usually make one of these so keep that in mind with the ingredients, to make more than one you are going to want to double or triple my recipe. Ingredients: Potatoes: (First Step) 1/2 cup Mccain's hashbrowns  1 tsp butter and olive oil a small pinch of Cumin, Basil, Oregano, Garlic Powder, and Pepper (to taste) Eggs:  1 scrambled egg 1 tbsp of Salsa (whatever kind you like, I use medium) OTHER:  1 Large Tortilla Shredded Cheese Guacamole Instructions:  1. Put your butter and oil into a hot saucepan and cook the potatoes until they are almost golden, then season them and continue cooking until they are golden brown. 2. Welcome readers! This blog is being created for a course I am taking at University. The purpose of my blog is going to be creating a genius hour project, this blog will be focused on cooking recipes that are vegetarian, and trying to improve my ability to cook. My goal is to create a project that people will find helpful and useful. This blog will include photos of the food I make, the recipes that I used, and how my experience cooking was! My progress will be measured through the new and fun recipes I make, and the progress I make through the completion of this project; further, I am interested to see if any of the new recipes will make it into my regular cooking routine.   Something I struggled with when I went to university was the lack of options I was able to have as a vegetarian when I needed to eat.
