Hi Taylor! I really enjoyed exploring your blog and learning about all the fun vegetarian things you learned to cook over the duration of the course. I really appreciate how creative you got with the recipes you cooked and adapting traditionally non-vegetarian meals. The layout of your blog was really nice, easy to navigate and has a clean aesthetic. Also the pictures that you posted along with each recipe looked absolutely amazing. I think something I would have loved if you hyperlinked or shared the websites where you got the recipes. I see some of your posts do have them, but others do not and that might be super helpful for people wanting to recreate anything you made or make any adjustments. Great job Taylor :)
Welcome readers! This blog is being created for a course I am taking at University. The purpose of my blog is going to be creating a genius hour project, this blog will be focused on cooking recipes that are vegetarian, and trying to improve my ability to cook. My goal is to create a project that people will find helpful and useful. This blog will include photos of the food I make, the recipes that I used, and how my experience cooking was! My progress will be measured through the new and fun recipes I make, and the progress I make through the completion of this project; further, I am interested to see if any of the new recipes will make it into my regular cooking routine. Something I struggled with when I went to university was the lack of options I was able to have as a vegetarian when I needed to eat. I lived in a residence that did not have a kitchen and therefore I was able to eat what was provided in the cafeteria. I ended up becoming extremely sick because of the lack...

My only struggle with it is one of the ingredients is extraordinarily hard to find.. If you can find it though, make this soup it is SO good. The recipe that I use is from Tasty but I make a few modifications to it based on what I have in my kitchen. Ingredients for 4 servings 2 stalks lemongrass 2 thai red chili peppers, sliced ( I sub with siracha) 3 cloves garlic, minced 1 tablespoon galangal, minced ( I sub ginger) 1 tablespoon refined coconut oil 5 cups vegetable broth (1.2 L) 1 large tomato, diced 5 lime leaves 1 cup coconut milk (240 mL) 2 tablespoons soy sauce 7 oz extra firm tofu (200 g) , cubed 6 oz cremini mushroom (165 g) , sliced ¼ cup lime juice 1 tablespoon agave salt, to taste T...
Well hello again :) as the course that this blog was made for comes to a close I am sad to see it go. This blog has been an absolutely fantastic way for me to be inspired to cook, and to venture out and try new things. I think any "goodbye" deserves a party, and at parties, there is always cake ;) My final recipe is my mom's birthday request, a chocolate cheesecake. Recipe I will insert pictures when it comes out of the oven.. cheers to all of you and thank you for joining me on this journey, farewell for now my friends :)
