Vegetarian Chili
In a crockpot on high add diced onion, garlic, carrot, celery, 2 cans of diced tomato, kidney beans, chickpeas, black beans, a jalapeno (cut into small pieces without the seeds), 2 tbsp of chili powder, 1 tsp ground cumin, 1 tsp dried oregano, 1 tsp sugar, 1/4 tsp salt, 1 cup of vegetable broth, 2 tbsp red wine vinegar, 2 tbsp of tomato paste.
Reduce the heat to low and let it simmer for a couple hours.
To serve I add shredded cheese, sour cream, and hemp hearts for some extra protein.
I usually make this in the morning and eat it for dinner that night.
