Vegetarian Taco's

 Vegetarian Tacos:

One of my favorite foods to make, and one of the hardest things to find at a restaurant.

Ingredients: 

1 pouch of Taco seasoning

Extra-firm tofu (depending on how many people you are serving and how much you want)

Tortillas

1 medium onion (I used yellow but you can use whatever you have)

3/4 cup corn

2 red bell peppers

Garlic

Toppings:

Avacado

Sour cream

Cheese 

Salsa

Instructions: 

1. Cut or crumble your tofu depending on your preference, this week I cut mine into pieces but either way it turns out very similar. Cook it until it's a little crispy then add half of your seasoning packaged (follow instructions on the package for water to seasoning ratio). Make sure you get extra firm tofu, in my experience, I don't like cooking with other kinds of tofu and the texture of other kinds is not my favorite. 

2. In a pan add oil and a little butter and the sliced onions, peppers, garlic and cook them, add the corn to this and allow everything to soften, you can add the seasoning to this if you want as well but you don't have to. 

3. Add everything onto a tortilla and enjoy it!
