Lucha Libre Bowl

 Hi everyone!! Welcome back to the blog :) this week I made a similar version of the Lucha Libre Bowl from Hopscotch. It was super yummy but did take a little bit of time to put together! I also didn't have all of the ingredients so it wasn't a perfect replica but it was still super delicious. In my bowl I made roasted sweet potato and I cooked falafel balls that I got from the store (I used the Yves ones), I cooked them in the oven according to the directions on the falafel box and they came out really yummy.  On the bottom, there was quinoa and romaine lettuce.  For other toppings, I used salsa, tomato, avocado, feta cheese, tzatziki, red onion, and hemp hearts.  I also made some dressing to go with it (it is meant to be served with chipotle lime but I couldn't find my chipotle seasoning). My dressing had olive oil, sugar, lime juice, taco seasoning, salt, pepper, and garlic powder. It wasn't as good as the original with chipotle seasoning but it was still yummy....

Air Fryer Veggie Stir Fry for One

This meal was something I made on the spot and it only took about 20 minutes and it was super yummy! This week has been a bit hectic school wise but yummy food always makes things better! Ingredients: 1/4 cup teriyaki sauce/peanut satay (may need more depending on how many people you are serving. tofu cut into squares 1 scoop cornstarch onions diced mushrooms cut into chunks  garlic  sliced broccoli cut into florets  red pepper  sliced 1/4 carrot sliced Instructions: First, you are going to want to either make or buy teriyaki sauce and peanut satay sauce, they are relatively easy to make.  Then you are going to want to cut up some tofu into small square chunks and put it into a plastic bag.  Add a small amount of sauce to the bag with the tofu, and add 1 scoop of cornstarch.  Close the bag and fill it with air, then shake it until the tofu is evenly covered in sauce and corn starch.  Preheat your air fryer to 380 and spray it with cooking spray, ...

Week 6 Update

 Hi everyone, so far so delicious! I am having so much fun with this project and it is helping inspire me to cook new things! I have posted lots of the recipes I am cooking to keep you all updated and inspired to cook something new! My family also got an Air fryer around Christmas so I am super excited to try to cook some new things in there! Let me know if you try any of the recipes I posted :)

Air Fryer Aranchini

This week I tried something new to a recipe I have cooked before and it was so good! Arancini is an Italian dish that is basically a rice/risotto ball fried with mozzarella cheese in the middle. Instant Pot Mongolian Beef (adapted to be vegetarian)

For this meal, I roast sweet potatoes in the oven with olive oil, salt, and pepper at 350 for 35 minutes, then flip them add a small amount of maple syrup, and cook them for 15 more minutes. Then in an instant pot put tofu, cut up carrots, mini potatoes, and anything else you may want to add with the sauce and cook it under pressure for 17 minutes, I included the recipe below, however it says Mongolian Beef on it (the original recipe) and I sub that out with Tofu.

Vegetarian Sheppards Pie

Vegetarian Sheppards Pie (individual portion) Combine and fry 1/2 of tofu (cut small) salt and pepper  1/4 teaspoon oregano 1 teaspoon of Worchester  1/4 cup of vegetable broth 1/2 a carrot diced.  Boil two white potatoes one sweet potato for 20 minutes.  Mash with 2 tablespoons cheddar cheese.  Place in an oven-safe pan and  T op with potatoes sprinkles breadcrumbs and paprika on top.  Cook at 350 for 30 minutes.   

Feta Pasta (Tiktok made me do it)

Baked Feta Pasta Ingredients 1-2 containers of mini tomatoes (the more the better) 8 oz of Feta Cheese 1/4 cup olive oil pasta/spaghetti squash 3 cloves garlic chopped up fresh basil lemon zest oregano salt pepper Instructions: Put olive oil in the bottom of an oven-safe casserole dish, and then put in your tomatoes (they don't need to be cut), roll them around in the oil to get a nice coat on them then clear a space in the middle for the block of feta. Put an additional 1tbsp of olive oil on top of the feta, and put the garlic on top of there, sprinkle the oregano, salt, and pepper all over, and put the lemon zest on top of the feta Put it in the oven at 400 for 35 minutes, then add your pasta, mix it all together and enjoy!! Mine is in the oven right now so I will add more pictures when it is done!

Week 5 update

 Hi everyone, here are some things I cooked this week!  The first is the viral Feta Pasta from TikTok, it's unreal and so easy would 10/10 recommend!! The second thing is tofu shepherds pie, also super easy and very very yummy! I am going to try it with a spaghetti squash once it's cooled down, I will post these recipes as soon as I can, but enjoy the food pics for now!!

 Apple Crisp 4-6 apples peeled and sliced  1/2 cup sugar 2 tbsp flour 1/2 teaspoon cinnamon 1 tbsp butter 2 tbsp lemon juice Topping: 3/4 cup brown sugar 3/4 cup flour 1/3 cup butter 1/8 teaspoon salt 3/4 cup of oats Instructions 1. Slice the apples and put them into a well-greased baking dish. Mix the sugar, flour cinnamon, and butter and sprinkle this over the apples. Pour lemon juice on top. 2. Mix together the brown sugar, flour, butter, salt, and oats and spread it over top of the apples 3. Bake at 325F for 1 hour
