Lucha Libre Bowl

 Hi everyone!! Welcome back to the blog :) this week I made a similar version of the Lucha Libre Bowl from Hopscotch. It was super yummy but did take a little bit of time to put together! I also didn't have all of the ingredients so it wasn't a perfect replica but it was still super delicious.

In my bowl I made roasted sweet potato and I cooked falafel balls that I got from the store (I used the Yves ones), I cooked them in the oven according to the directions on the falafel box and they came out really yummy. 

On the bottom, there was quinoa and romaine lettuce. 
For other toppings, I used salsa, tomato, avocado, feta cheese, tzatziki, red onion, and hemp hearts. 

I also made some dressing to go with it (it is meant to be served with chipotle lime but I couldn't find my chipotle seasoning). My dressing had olive oil, sugar, lime juice, taco seasoning, salt, pepper, and garlic powder. It wasn't as good as the original with chipotle seasoning but it was still yummy. 

When it was all assembled I mixed it all together and it was a really yummy protein-packed lunch for me :)
